Sherbet has confirmed that Lee Drinkwater, a founding partner and long-standing senior figure in its fleet operations, has stepped back from day-to-day involvement in the business, marking the end of a significant chapter in the company’s development.

Drinkwater played a central role in the early formation and growth of Sherbet, helping to establish the operational framework and standards that underpin the business today. From its earliest years, he was closely involved in shaping internal processes and fleet management practices that supported scale while maintaining regulatory compliance and service consistency.

During his tenure, Drinkwater oversaw some of the largest licensed taxi fleets operating in London, with responsibility for between 700 and 800 vehicles at various points. His remit covered vehicle maintenance programmes, overhauls, MOT compliance, taxi production and fittings, meter installations, and the coordination of day-to-day driver support across the fleet.

Industry colleagues widely regarded Drinkwater as a hands-on operator with deep technical knowledge of licensed taxi operations. His approach focused on detail-driven fleet management and long-term decision-making, particularly around vehicle lifecycle planning and workshop standards in a regulatory environment that has grown more complex over time.

Sherbet said Drinkwater’s leadership helped embed a culture based on fairness and operational discipline, shaping how the business worked with drivers, suppliers, and customers. That structure has remained in place as the company expanded its footprint in London’s licensed taxi market.

Drinkwater is now stepping away from operational responsibilities to focus on personal commitments, including spending more time with family and travel. He leaves behind a fleet operation that remains fully active and structured around the systems developed during his involvement.

Asher Moses, Sherbet Founder and CEO, said: “Lee is a true operator and a man of integrity. He always believed in doing things properly, treating drivers fairly, and protecting the standards of the licensed London taxi. Building SHERBET alongside him has been an absolute honour.”
